MO’s Muffins
As part of our mantra at BFY Life we support living a balanced life. We wanted to share one of our favorite treats. Although we label this a treat (because it is SO good), from the ingredients below you will notice its jammed pact with nutrients to help you achieve your health goals. We added fruits and flaxseed to pump up the antioxidants. Then we included Nirvana Life – Pr Strawberry Cheesecake for some added health benefits and to kick up the flavor a notch. We suggest using this to help crave a sweet tooth or if you are going to a party this makes for a great item to share with friends.
Ingredients
Serving Size: ~16 Muffins
Time
Prep Time: 10 minutes of prep
Cook Time: Bake at 350 for 12-15 minutes until tops are brown
- 1 cup flour
- 1 cup whole wheat flour
- 3 teaspoons baking power
- ½ teaspoon salt
- ¼ cup sugar
- 1 teaspoon flaxseed
- 1 egg
- 2 bananas
- ¼ cup peanut butter (heat for about 10-15 seconds)
- 3 teaspoons honey (heat for about 10-15 seconds)
- ½ cup non-dairy milk (coconut, almond, etc)
- 1 scoop BFY Young Strawberry Cheesecake
Optional
¼ cup chocolate chips
Directions
Line muffin tin with paper cups and fill ¾ of the way to the top. Makes about 16 muffins. Bake at 350 for 12-15 minutes until tops are brown
Prep
Mix dry items in a bowl. Mash bananas in a separate bowl and add to dry mixture. Add egg, peanut butter, honey and milk and mix batter by hand.
