Plant-Based Chili

I don’t know about you, but when the Fall weather starts to change, I instantly start craving chili. There’s just something about Fall, Football, and Chili that goes so well together. As much as I love chili, I don’t want to take too much time making it. This is my go-to, simple and quick, chili recipe. It can be done on the stove or in the crock pot. The best part about this recipe though is that it is plant-based and vegetarian. I love that there are so many options for plant-based ground-beef alternatives these days. This recipe is full of protein and flavor. It is sure to hit that comfort food spot that we all crave, especially as it gets colder outside. Another plus, it also makes a large batch and can be frozen, which is great! Dress it up with your favorite toppings (avocado, jalapenos, vegan cheese). I hope you enjoy this recipe as much as I do!

Plant-Based Chili Recipe:

  • 1 lb Plant-Based Ground Beef Substitute
  • 1 15 oz can of red kidney beans, drained and rinsed
  • 1 medium yellow onion, chopped
  • 1-2 tsp of minced garlic
  • 2 10 oz cans of diced tomato and chili
  • 2 15 oz cans of tomato sauce
  • Chili seasoning (to taste)
  • Salt & Pepper (to taste)
  • Olive oil

Heat up a little bit of olive oil in the bottom of the pot/ pan

Add minced garlic, once the garlic has heated up add chopped onions

Sauté onions in garlic until they’re translucent (3-5 min)

Add Plant-Based Beef

Salt and pepper ground beef

Brown the Beef

Add chili Seasoning to browned beef in a pan and stir

Add Kidney beans and stir everything together. Let stew all together for a few minutes, stirring occasionally

After a few minutes add the tomatoes and chilis

Let all that goodness meld together for a few minutes stirring occasionally

***If placing in the crockpot or using a pan to brown plant-based meat rather than a pot, just brown plant-based beef in pan and transfer to crock pot and place remaining ingredients, including beans, tomato & chilis, onions, and seasonings***

Add the two cans of tomato sauce, then fill one can with water and add to the pot

Stir, put the lid on, and simmer on low for 30-45 min for all that yummy goodness to meld together and be delicious!
